Jambalaya with chicken, Andouille sausage, peppers, onions, celery, and a side of cornbread
Mumbo Gumbo is a food cart that specializes in Cajun and Creole style food in Southwest Portland. When my mom and I visited a couple weeks ago, she ordered the Jambalaya, which is made with chicken, Andouille sausage, peppers, onions, celery, and a side of cornbread. It's everything I want in jambalaya and then some. It comes with a good helping of Andouille sausage. Overall, it's a pretty spicy dish so make sure you've got some water nearby.
