Miso Butter Pasta made with Shared Cultures honeynut miso, kelp pearls, and gochugaru

Hot Focaccia made from overnight sourdough and served with house vinegars

My dining companion and I finally visited Daytrip, a hip natural wine bar on Telegraph between 43rd and 44th in Temescal, in late March. Although it apparently opened in just October, I had been wanting to try it for what felt like years.
We ordered a few things: the Hot Focaccia to start, followed by the Miso Butter Pasta as our main course, and a glass of their natural wines each. The focaccia was incredible—it was warm, slightly buttery, and came with a side of photogenic house vinegars. The Miso Butter Pasta was a decadent dream made with Shared Cultures honeynut miso, kelp pearls, and gochugaru. I ordered a glass of the Quarticello Spuma Mia Rosato, a rosé that veered on the sweet side and tasted like honey. It was so good that I've been searching for it ever since.
Next time, I might see what wines they have for sale in their bottle shop. If you've been to Daytrip, what would you recommend trying?
